Queen Diamond Jubilee Cupcakes
These gloriously colourful and eye-catching cupcakes are sure to be a hit. They look like they should be time consuming to make, but they’re so easy to put together, with a basic cupcake recipe that you can dress up and turn into any celebration you’d like.
Ingredients:
- 2 eggs
- 110g caster sugar
- 110g self-raising flour
- 110g butter
- 2 tablespoons of milk
- 2 teaspoons of baking powder
- 1 teaspoon of vanilla extract
- Food colourings
- Icing sugar for decorating
Instructions:
- Preheat the oven to 160°C/140°C fan/gas 3. Line an 12 hole muffin tin with cake cases.
- Put the butter, sugar, eggs, vanilla extract, and milk into a large mixing bowl, and mix together until thick and creamy.
- Sift in the flour and baking powder, and lightly fold in.
- Divide the mixture between four bowls, then add the different food colourings to make the different shades of colour.
- Mix each one until nicely blended and all the same consistency, then spoon into the cake cases, drop alternating spoonfuls of each mixture into the cases, layering them to get a marbling effect.
- Bake in the preheated oven for 15 minutes, until golden and slightly risen.
- Allow to cool for a few minutes before transferring onto a cooling rack. Once cooled, dust with icing sugar for a finishing touch.
Squid & King Prawns
This delicious Squid & King Prawn recipe can be served as a main or an appetiser. Its vibrant colours will make it a stunning centrepiece to any dinner. Each bite is packed full with flavour thanks to the rich tomato and white wine sauce and garlic, hungarian paprika and parsley.
Ingredients:
- 500g squid
- 250g king prawns
- 2 large garlic cloves, finely chopped
- 2 tablespoons of extra virgin olive oil
- 4 tablespoons of hungarian paprika
- 1/2 teaspoon of dried oregano
- 1 teaspoon of sugar
- 2 tablespoons of chopped parsley
- 100ml white wine
- 500g cooked tomatoes
- 1 lemon
Instructions:
- Start by preparing the squid, peel off the outer layer, then score the surface and cut into thin slices.
- Heat the olive oil in a large pan over a medium-high heat and add the garlic, Hungarian paprika, oregano and sugar. Cook for a few minutes.
- Add the squid and parsley, mix together, then pour over the white wine and chopped tomatoes, cover and simmer for 10 minutes.
