What You'll Need:
- 2 tablespoons of extra-virgin olive oil
- 2 cloves garlic, minced
- 3 cups roasted vegetables: bell peppers, zucchini, mushrooms, cherry tomatoes, onions
- 1 teaspoon of dried oregano
- 1/2 teaspoon of Italian seasoning
- 1/4 teaspoon of red pepper flakes
- Salt and freshly ground black pepper to taste
- 1 cup of vegetable broth
- 10 ounces of uncooked penne pasta
- 2 tablespoons of chopped fresh parsley
- 1/2 cup of grated Parmesan cheese
- 1/2 cup of shredded mozzarella cheese
- Optional: 2 ounces of diced bacon
Instructions:
1. Preheat oven to 375 degrees Fahrenheit. Grease a 9x13 inch baking dish with olive oil.
2. Heat olive oil in a large skillet over medium heat. Add garlic and cook for about a minute, stirring regularly. Add vegetables, oregano, Italian seasoning, red pepper flakes, salt, and pepper. Saute for about 5 minutes, stirring occasionally.
3. Reduce heat to medium-low and pour in the vegetable broth. Simmer for about 2 minutes, then add the uncooked penne pasta. Cook covered for about 10 minutes, or until the pasta is al dente (tender but still slightly firm to the bite). Stir occasionally.
4. Transfer the pasta to the baking dish and top with parsley, cheese, and optional bacon pieces. Bake for 20-25 minutes, or until the cheese is completely melted and lightly browned. Serve warm.
