Spinach Parmesan Pasta

Ingredients:
- 4 garlic cloves, minced
- 4 tablespoons butter
- 10 ounces fresh spinach
- ⅔ cup heavy cream
- 1 cup shaved Parmesan
- 1 pound uncooked pasta
- Salt and pepper, to taste
Instructions:
- In a large skillet, melt butter over medium heat.
- Add the garlic and sauté for a couple minutes, stirring often.
- Add the spinach to the skillet and cook, stirring often, until it's just wilted, about 2 minutes.
- Add the cream and Parmesan and stir until everything is combined and cheese has melted, about 2 minutes.
- In a large pot, bring some salted water to a boil. Add the pasta and cook until al dente, about 8 to 10 minutes.
- Drain the pasta and add to the skillet with the sauce. Stir everything together until the sauce has evenly coated the pasta.
- Season with salt and pepper, to taste.

- 1 onion, diced
- 3 garlic cloves, minced
- 1 28-ounce can diced tomatoes
- 1 tablespoon tomato paste
- 2 teaspoons dried Italian seasoning
- 1 teaspoon sugar
- Salt and pepper, to taste
Instructions:
- In a large pot, heat olive oil over medium heat.
- Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
- Add tomatoes and tomato paste and stir to combine. Reduce heat to low and add Italian seasoning, sugar and a pinch of salt and pepper. Stir to combine.
- Simmer the sauce for 10-15 minutes until it has thickened slightly and the flavors have come together. Taste and adjust seasonings, if needed.
- Serve over your favorite cooked pasta. Enjoy!
