Mushroom pasta is a warm, comforting, and comforting dinners perfect for a chilly autumn evening. It's incredibly easy to make and requires only a few ingredients! All you need is some mushrooms, pasta, garlic, onion, white wine and parsley.
Ingredients
- 250g mushrooms (I used Swiss Brown, sliced)
- 250g (1/2 lb) pasta (I usedlinguine)
- 2 cloves garlic, minced
- 1 onion, finely chopped
- 1/4 cup white wine
- 2 tablespoons butter
- 3 tablespoons fresh parsley, finely chopped
- Salt and pepper, to taste
Instructions
- Cook the pasta according to the package instructions.
- In a large skillet, heat the butter over medium heat. Once melted, add the garlic and onion, cooking until translucent.
- Add the mushrooms and cook until they are golden brown and cooked through, about 5 minutes.
- Add the white wine and reduce the liquid until almost gone, about 2-3 minutes. I like to add a pinch of salt and pepper for some extra flavor.
- Add the cooked pasta to the mushroom mixture and stir to combine. Now add the fresh parsley and stir. You may need to add a little bit of cooking liquid from the pasta if it looks dry.
- Serve hot with a garnish of some fresh parsley. Enjoy!
