Creamy Garlic Mushroom Pasta

Ingredients
- 1/2 pound linguine
- 2 tablespoons olive oil
- 2-3 cloves garlic, minced
- 2 cups baby portobello mushrooms, sliced
- 1/4 teaspoon red pepper flakes
- 1/4 cup white wine (or chicken broth)
- 2 cups heavy cream
- Salt and freshly ground black pepper to taste
- 1/4 cup freshly grated Parmesan
- Fresh parsley for garnish (optional)
Instructions
- Bring a large pot of salted water to boil. Add the linguine and cook until al dente, about 8-10 minutes. Reserve 1/2 cup of the starchy pasta cooking water.
- In a large skillet, heat olive oil over medium-high heat and add garlic and sliced mushrooms. Saute until mushrooms are golden, about 5-7 minutes. Add red pepper flakes, white wine, and heavy cream. Season with salt and pepper, to taste.
- Reduce heat to low and simmer for 5 minutes, stirring occasionally. The sauce will thicken as it simmers. If the sauce gets too thick, add a few tablespoons of the pasta cooking water.
- Add the cooked pasta to the sauce and toss until everything is completely combined. Finally, toss in the Parmesan cheese.
- Garnish with fresh parsley, if desired, and serve immediately.
