This hearty and comforting soup, Instant Pot Pasta Fagioli, is a delicious Italian classic that is made quickly and easily with the help of a pressure cooker! It's a perfect one-pot meal packed with hearty veggies, cannellini beans, and short pasta. The broth is made with a flavorful combination of vegetable stock, fresh tomato sauce, and herbs. The result is a delicious, thick soup that's sure to please!
Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 teaspoons Italian seasoning
- 1/4 teaspoon red pepper flakes
- 4 cups vegetable stock or broth
- 1 (15-ounce) can diced tomatoes, with juices
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 1/2 cup ditalini pasta
- Salt and pepper to taste
Instructions
- Select the Sauté setting on the Instant Pot and wait until the display reads Hot. Add oil and heat until shimmering, about 30 seconds. Add onion, garlic, carrots, and celery and sauté, stirring occasionally until the vegetables start to soften, about 3 minutes.
- Stir in oregano, basil, Italian seasoning, and red pepper flakes and cook until fragrant, about 1 minute.
- Add vegetable stock, diced tomatoes, and beans and stir to combine. Secure the lid, making sure the venting knob is in the Sealing position
- Select the Manual or Pressure Cook setting and set the timer for 7 minutes. When the cooking cycle is finished, quick release the pressure by carefully turning the venting knob.
- Stir in the pasta and cook until it is al dente, about 5 minutes more. Add salt and pepper to taste.
- Serve hot with additional freshly-grated Parmesan cheese and fresh parsley, if desired.
