Make this incredible and comforting Pasta Fagioli Soup in just 20 minutes. It’s so warm and filling, sure to become a hit with the family. This Italian classic is vegetarian and easily vegan too with a few small swaps.
Ingredients
1 tablespoon of olive oil: For sautéing.
2 carrots: Small diced
2 celery stalks: Small diced
1 small yellow onion: Small diced
3 cloves of garlic: Minced
3 cups of vegetable broth: Substitute with water or broth of your choice for a milder flavour.
1 (15-ounce) can of white beans: Drained and rinsed. Great Northern or Cannellini beans work best.
1 (14-ounce) can of crushed tomatoes: You may substitute with another variety of canned tomatoes.
1/2 cup of dry ditalini pasta: Substitute with small macaroni or elbow macaroni is not available.
2 tablespoons of basil pesto: Homemade or store bought.
1/4 teaspoon of red pepper flakes: Optional.
Salt & freshly ground black pepper: To taste.
2 tablespoons of chopped fresh parsley: For garnishing.
Directions
Heat the olive oil over medium heat in a large pot. Add the diced carrots, celery and onion; sauté for 5 minutes or until the vegetables are softened. Add the minced garlic and sauté for just one minute. Pour in the vegetable broth, white beans, crushed tomatoes, ditalini pasta, basil pesto and optional red pepper flakes.
Bring to a boil, reduce the heat to low, and simmer, uncovered, for 10 minutes or until the pasta is tender. Taste and season with salt, freshly ground black pepper and more red pepper flakes (optional) if needed.
Garnish each bowl with chopped fresh parsley and an extra swirl of olive oil. Enjoy warm!
