- 3 tablespoons butter, or oil of choice
- 1 onion, finely diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced (see notes)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes
- 1/4 cup tomato sauce
- 1 cup sundried tomatoes, julienned
- 3/4 cup cream
- 2 cups cooked pasta
- salt and pepper, to taste
- freshly grated parmesan cheese, for garnish
- oregano, parsley, or basil, for garnish
Instructions
- Melt the butter in a large skillet over medium-high heat. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
- Add the mushrooms and cook until the mushrooms are lightly browned, about 5 minutes.
- Stir in the Italian seasoning, garlic powder, smoked paprika, and red pepper flakes, and cook for 1 minute.
- Add in the tomato sauce, sundried tomatoes, and cream and reduce the heat to low. Simmer for 8-10 minutes.
- Add the cooked pasta and stir to combine. Cook for 3-4 minutes until the pasta is heated through.
