This creamy mushroom pasta is the perfect comfort food that can be enjoyed at any time. Delicious, with a rich and creamy flavor, it’s both vegan and nut free and makes for a great main course or side dish.
Ingredients:
– 1 onion, diced
– 2 cloves garlic, minced
– 8 ounces mushrooms, roughly diced
– 2 tablespoons butter (or vegan butter)
– 1 tablespoon olive oil
– 2 cups vegetable broth
– 1 pound penne pasta
– 2 cups fresh or frozen green peas
– 2 cups fresh or frozen asparagus, cut into 1 inch pieces
– 1/4 cup heavy cream (or vegan cream)
– 1/4 cup freshly grated parmesan cheese (or vegan parmesan cheese)
– 2 tablespoons freshly chopped parsley
– 2 tablespoons freshly chopped basil
– salt and pepper, to taste
Instructions:
1. Heat a large pot over medium heat and add the butter and olive oil. Once the butter and oil are melted, add the onion and cook until softened, about 5 minutes. Add the garlic and mushrooms and cook until the mushrooms are golden brown, about 5 minutes. 2. Add the vegetable broth and bring to a boil. Once boiling, add the pasta and reduce heat to low and simmer for 8 minutes. 3. Add the peas and asparagus, stirring to combine. Simmer for 5 more minutes, or until the pasta is cooked through. 4. Turn the heat off and add the cream, parmesan cheese, parsley, and basil, stirring to combine. Taste and season with salt and pepper if needed. 5. Serve warm and enjoy!
