This easy vegetable baked pasta is a mouth-watering dinner recipe that you and your family will fall in love with. Packed with a delicious blend of vegetables, cheesy goodness and a hearty pasta, this dish will make your table filled with joy in no time.
Ingredients
1/2 cup olive oil
1 onion, finely chopped
2 cloves garlic, crushed
1 red bell pepper, chopped
1 zucchini, chopped
1/2 cup fresh parsley, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup ricotta cheese
3/4 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup heavy cream
1/4 cup yogurt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/3 cup slivered almonds
1/3 cup raisins
1/3 cup sun-dried tomatoes, chopped
360 grams penne rigate, or any other type of pasta
Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil.
In a large skillet, heat the olive oil and add the onions, garlic, bell pepper and zucchini, cooking until vegetables are tender. Once tender, add the parsley, salt and pepper and stir.
In a bowl, combine together the ricotta cheese, mozzarella cheese, Parmesan cheese, heavy cream, yogurt and the spices. Stir to combine all ingredients.
Add the slivered almonds, raisins and sun-dried tomatoes to the skillet mix and stir to combine.
Add the penne rigate to the skillet and stir. Gradually, add the cheese sauce and stir to combine.
Pour the mix into your greased baking dish. Sprinkle some mozzarella cheese on top, followed by some extra Parmesan cheese.
Bake for 25 minutes or until cheese is melted and golden. Enjoy!
