Chicken, Spinach and Mushroom Pasta Bake
Ingredients
- 4 cloves of garlic, minced
- 1 lb. chicken thighs, cut into cubes
- 4 cups of fresh spinach leaves
- 1 cup of mushrooms, sliced
- 2 tablespoons of olive oil
- 1⁄2 teaspoon of salt
- 1⁄4 teaspoon of freshly ground black pepper
- 1⁄4 teaspoon of red pepper flakes
- 1⁄2 cup of heavy cream
- 1⁄2 cup of parmesan cheese, grated
- 1⁄2 cup of marinara sauce
- 8 oz. of pasta, cooked according to package instructions
Instructions
- Preheat oven to 375°F/190°C.
- In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for one minute.
- Add the chicken cubes and cook until nearly cooked through. Add the mushrooms, spinach, salt, pepper and red pepper flakes and cook for about two minutes or until chicken is just cooked through.
- Add the cream, Parmesan cheese and marinara sauce, stirring to combine. Cook for two minutes over medium heat.
- Add pasta and stir to combine.
- Transfer the mix to a greased 9x13-inch baking dish and bake, uncovered, for 20 minutes.
- Serve hot.
Chicken and Spinach in Creamy Mushroom Sauce

Instructions
- In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for one minute.

- Sprinkle flour over the chicken and vegetables and cook until lightly browned, about one minute.
- Add wine and broth and stir to combine. Cook for about two minutes until the sauce has thickened.
- Stir in heavy cream and simmer until heated through
