This delicious Easy Chicken and Mushroom Pasta Bake is the perfect weeknight meal. Made with juicy chicken, mushrooms and a creamy cheesy pasta bake, this is a sure-fire family favorite. Make sure you have all the ingredients on hand for a tasty time in the kitchen.
Ingredients:
-1 tablespoon oil
-1 small onion, chopped
-1/2 pound boneless, skinless chicken thighs, cubed
-1/2 pound baby bella mushrooms, sliced
-1 teaspoon garlic, minced
-1 teaspoon dried oregano
-1 teaspoon dried basil
-1/4 teaspoon red pepper flakes
-salt and pepper, to taste
-1 (15-ounce) can diced tomatoes
-2 cups dry pasta
-2 tablespoons butter
-2 tablespoons all-purpose flour
-2 cups milk
-1 cup mozzarella cheese, shredded + extra for topping
-1/2 cup parmesan, grated
Instructions:
1. Preheat the oven to 350°F (180°C). Grease a 9" x 13" baking dish.
2. Heat the oil in large skillet over medium heat. Add the onion and cook until soft and fragrant, about 5 minutes. Add the chicken and mushrooms and cook until the chicken is just cooked through and the mushrooms are just beginning to brown, about 5 minutes. Add the garlic, oregano, basil, red pepper flakes, salt, and pepper and cook for 1 minute.
3. Add the diced tomatoes and cook for 2 minutes. Transfer the mixture to the prepared baking dish and spread it evenly.
4. Cook the pasta according to package instructions and drain. Add the cooked pasta to the baking dish.
5. In the same skillet, melt the butter. Add the flour and whisk to combine. Cook over low heat, whisking constantly, for 1 minute. Slowly pour in the milk and whisk to combine. Bring the mixture to a low boil and cook, whisking constantly, until the mixture is thick and bubbling, about 5 minutes. Remove from the heat and stir in the mozzarella cheese and Parmesan cheese.
6. Pour the cheese sauce over the pasta and chicken mixture and spread it evenly. Sprinkle the top with extra mozzarella cheese.
7. Bake for 20 minutes until the top is golden and bubbling. Let the dish cool for 5 minutes before serving.
