Comfort food at its finest - creamy mushroom pasta! This quick and easy homemade pasta dish is filled with a creamy, garlicky mushroom sauce that is packed with rich and delicious flavors. This dish is the perfect entree for a quiet night in or for feeding a small crowd. Plus, this creamy mushroom pasta is vegan, so it's perfect for those following a plant-based diet.
Ingredients:
- 8 ounces of your favorite type of pasta
- ½ cup vegan margarine
- 2 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 1 cup vegetable broth
- 1 cup dairy-free milk of your choice
- 2 tablespoons nutritional yeast
- 1 teaspoon dried oregano
- ¼ teaspoon black pepper
- 1 (16-ounce) package of sliced mushrooms
- Salt, to taste
- Optional, vegan Parmesan cheese, to garnish
Instructions:
- Bring a pot of salted water to a boil. Add in the pasta and cook according to package instructions.
- Meanwhile, melt the vegan margarine in a large skillet over medium heat. When melted, add in the garlic and stir for about 30 seconds.
- Add in the flour and cook for about 1 minute, stirring consistently with a whisk.
- Slowly add in the vegetable broth, dairy-free milk, nutritional yeast, oregano and pepper, stirring consistently with the whisk.
- Keep stirring until the sauce begins to thicken, about 3-5 minutes.
- Add in the mushrooms and let the sauce simmer until completely cooked through and the mushrooms have softened, about 5 minutes.
- Add a pinch of salt to the sauce, to taste.
- Add the cooked pasta to the skillet. Toss everything together until the pasta is coated with the sauce.
- Garnish with vegan Parmesan cheese and serve warm.
