Creamy Mushroom & Chicken Pasta Recipe (video) - Tatyanas Everyday Food
- 2 tablespoons butter or extra-virgin olive oil
- 2 cloves garlic, minced
- 1 lb. boneless, skinless chicken breasts, cut into small cubes
- 8 oz. fresh mushrooms, sliced
- 3 tablespoons all-purpose flour
- 1 1/2 teaspoons Italian seasoning
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 teaspoon sea salt, divided
- 1/4 teaspoon freshly ground black pepper, divided
- 12 oz. pasta, any shape
- 1/3 cup freshly grated Parmesan cheese
- 2 tablespoons minced fresh parsley, optional
Instructions:
1. Heat the butter or olive oil in a large skillet over medium high heat. Add the garlic and chicken and cook for 4-5 minutes or until the chicken is no longer pink. Remove from the skillet and set aside.
2. Add the mushrooms to the same skillet and cook for 4-5 minutes or until the mushrooms are golden brown. Add the flour, Italian seasoning, sea salt, and black pepper and stir until combined.
3. Gradually pour in the chicken broth, stirring constantly until the mixture is smooth. Add the cream and stir until combined.
4. Bring the mixture to a boil, then reduce the heat and simmer for 6-7 minutes or until slightly thickened. Add the cooked chicken and stir to combine.
5. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
6. Add the pasta to the skillet and toss to combine. Taste and adjust seasoning, if needed. Serve the pasta with Parmesan cheese and fresh parsley, if desired.
