Creamy Pesto Pasta with Chicken
Ingredients:
- 2 boneless, skinless chicken breasts
- 3-4 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon dry oregano
- 1 cup chicken broth
- 1 jar of prepared pesto (or make your own)
- 1/2 cup heavy cream
- 2 cups cooked pasta
- Salt and pepper to taste
- Grated Parmesan cheese, for topping
Instructions:
- Season chicken breasts with salt and pepper. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add remaining oil, onions, and garlic to skillet. Saute for 1-2 minutes, then stir in oregano. Add chicken broth, pesto, and cream. Bring to a simmer and cook for about 5 minutes. Season with salt and pepper as desired.
- Add cooked chicken to sauce, stirring to combine. Reduce heat to low and simmer for 5-10 minutes, or until sauce thickens. Taste and adjust seasoning as desired.
- Stir cooked pasta into sauce and chicken. Serve warm with Parmesan cheese.
