Vegetarian White Sauce Pasta
Ingredients:
- 1 tablespoon olive oil
- 3 cloves garlic, chopped
- 2 tablespoons all-purpose flour
- 2 cups vegetable broth
- 12 ounces penne pasta
- 2 tablespoons heavy cream
- 1/4 cup Parmesan cheese, grated
- Salt and pepper, to taste
- 5 ounces cherry tomatoes, halved
- 2 tablespoons fresh parsley, chopped
Instructions:
- Begin by prepping the ingredients. Chop the garlic and set aside. Halve the cherry tomatoes, and grate the Parmesan cheese. With your ingredients prepped, you are now ready to begin making the white sauce.
- In a large skillet or sauté pan, heat the olive oil over medium heat. To the oil, add the chopped garlic and cook until just golden brown. Be careful not to burn the garlic.
- Add the flour and mix until the garlic and the flour are combined. Cook for an additional minute, stirring occasionally.
- Add the vegetable broth and whisk until the contents are combined. Season with salt and pepper, to taste.
- Lower the heat to medium-low and let the sauce simmer for about 10 minutes.
- In the meantime, cook the penne according to package directions. Drain the pasta and set aside.
- Once the sauce has simmered for 10 minutes, add the heavy cream, Parmesan cheese, and cherry tomatoes to the pan and stir until the cheese melts and the ingredients are incorporated. Taste and adjust seasoning, if necessary.
- Add the cooked pasta to the sauce and fold together until the pasta is completely coated.
- Sprinkle with chopped parsley and serve warm.
Lemon One Pot Pasta
Ingredients:
- 8 ounces linguine
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 shallot, minced
- 3 cups vegetable broth
- 2 tablespoons fresh parsley, chopped
- 1 lemon, zest and juice
- 1/4 teaspoon red pepper flakes
- Salt and pepper, to taste
- 1/2 cup Parmesan cheese, grated
Instructions:
- In a large skillet or sauté pan, heat the olive oil over low-medium heat. Add the minced garlic and shallot and cook until the vegetables have softened and are lightly golden, about 6 to 8 minutes.
- Add the linguine pasta and vegetable broth, and increase the heat to medium-high and bring the contents to a boil. Cover the pan, reduce the heat to simmer, and cook for 12 minutes. Note: while the pasta is cooking, make sure to check on it every few minutes, stirring to prevent the pasta from sticking.
- Once the pasta is cooked, remove the pan from the heat and add the parsley, lemon
