This Cajun Shrimp Pasta recipe is creamy, lightened up, and oh-so-easy! The perfect weeknight dinner, it's ready in less than 25 minutes and is loaded with bold Cajun flavors. Topped with juicy shrimp, it's gluten free and low carb and sure to become a regular on your dinner rotation.
Ingredients
4 cloves garlic. minced
1 small onion, diced
1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
2 tablespoons Cajun seasoning
8 ounces penne pasta
2 tablespoons butter
1 cup cream
1 cup halved cherry tomatoes
1/4 cup grated parmesan
Salt, to taste
Instructions
In a large skillet set over medium-high heat, add the garlic, onion, and olive oil. Cook 3 minutes, stirring occasionally, until the onion is softened. Add the shrimp, season with the Cajun seasoning and cook 2-3 minutes, until the shrimp is cooked through. Remove the shrimp from the calzone and set aside. Add the pasta to a large pot of boiling water and cook according to package instructions. Drain and return to the pot. Add the butter and cream to the pot with pasta, stirring to combine. Return the shrimp back to the calzone, add the cherry tomatoes and Parmesan, and stir to combine. Season with salt, as desired, and serve warm. Enjoy!
