Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 pound salmon, diced
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian herb blend
- 8 ounces gluten-free pasta
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3/4 cup mascarpone
- 3/4 cup chicken broth
- 3/4 cup heavy cream
- 1/4 cup freshly grated parmesan
- 1/4 cup freshly chopped parsley, plus more for garnish
Instructions
- Bring a pot of salted water to a boil and cook the pasta according to the package instructions.
- In a large skillet, heat the olive oil over medium-high heat. Add the garlic and sauté for 1 minute.
- Add the salmon, salt, pepper, and Italian herb blend and cook until the salmon is just cooked through, about 5 minutes.
- Add the asparagus and cook for an additional minute.
- Stir in the mascarpone, chicken broth, and heavy cream and bring to a simmer.
- Add the cooked pasta to the skillet and toss to coat. Simmer for 2 to 3 minutes.
- Stir in the parmesan and freshly chopped parsley.
- Garnish with additional parsley and enjoy!
