My mouth dropped the first time I saw this fun, creamy pasta dish with a Mascarpone tomato sauce. Trust me, you have not tasted pasta this delicious! The combination of cream and tomatoes is the perfect way to make any pasta dish unique.
Mascarpone Pasta (Tomato and Mascarpone Sauce)
- 2 tablespoons of butter
- 2 cloves of garlic (minced)
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/4 cup of white wine
- 1 can of diced tomatoes
- 1/2 cup of mascarpone cheese
- 2 tablespoons of fresh basil (minced)
- 2 tablespoons of fresh parsley (minced)
- 1 pound of pasta (cook as stated on package)
Instructions
- In a large skillet, melt the butter over low-medium heat.
- Add in the garlic, salt, and pepper. Stir to combine and let simmer for 1 minute.
- Add the white wine, diced tomatoes, and mascarpone cheese. Let this simmer until the sauce has reduced and thickened (about 8-10 minutes).
- Stir in the basil and parsley. Taste and adjust seasonings if necessary.
- When the sauce is ready, add in the cooked pasta and toss to combine.
- Serve and enjoy!
Spinach & Mascarpone Pasta
- 2 tablespoons of olive oil

- 2 cups of fresh spinach
- 1 cup of frozen peas
- 1 pound of pasta (cook as stated on package)
Instructions
- In a large skillet, heat the olive oil over low-medium heat.
- Add in the garlic and let it simmer for 1 minutes.
- Add the white wine and mascarpone cheese. Whisk until it's smooth.
- Add the salt and pepper to taste. Let this sauce simmer until it thickens and reduces (about 8-10 minutes).
- Stir in the spinach, peas, and cooked pasta. Cook until the vegetables are tender and the pasta is coated with the sauce.
- Serve and enjoy!
