Have a hankering for some Italian cuisine? Then try out this delicious, Ricotta and Spinach Pasta Bake. Not only is it easy to make, but you can use whatever type of pasta you'd like - after all, who doesn't love carbs?

Ingredients

Ricotta and spinach pasta bake

1 pound favorite type of pasta (I used rigatoni for the photos, but you can use whatever shape you like)
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1 pound ground beef
8 ounces baby spinach
15 ounces part skim ricotta cheese
1 cup freshly grated parmesan cheese, plus extra for topping
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper
Kosher salt, to taste

Instructions

Cook the pasta according to the package directions. Drain when done and set aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
Add the onion and cook until softened and translucent, about 3-4 minutes.
Add the garlic and stir often for 30 seconds, until fragrant.
Add the ground beef and cook until no longer pink, breaking it up as it cooks. Season with salt, pepper and red pepper flakes, to taste.
Add the spinach and cook until wilted, about 1-2 minutes.
Remove from heat and set aside.
In a bowl, stir together the ricotta, parmesan cheese, oregano, black pepper and salt to taste. Set aside.
Preheat oven to 350 degrees F.
In a 9x13-inch baking dish, layer the pasta, beef and spinach mixture, ricotta mixture and parmesan cheese.
Bake in preheated oven for 25-30 minutes, until the top is golden brown.
Serve hot.
