Easy Garlic Mushroom Pasta
This irresistibly flavourful garlic mushroom pasta is sure to have your friends and family asking for more.
Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, peeled and sliced
- 1/2 pound (225 g) mushrooms, sliced
- 3/4 cup (175 ml) chicken stock
- 2 tablespoons butter
- 1/2 cup (125 ml) cream
- Kosher salt and freshly ground black pepper to taste
- 1/2 pound (225 g) cooked pasta
- 2 tablespoons chopped parsley, for garnish
Instructions
- Heat the oil, garlic and mushrooms in a skillet over medium heat for about 5 minutes, stirring occasionally.
- Pour in the chicken stock, reduce the heat to low and simmer for about 8 minutes or until the stock has reduced by about half.
- Add the butter and cream and season with salt and pepper. Simmer for a few minutes, stirring often.
- Add the cooked pasta to the skillet and stir to combine.
- Cook for a few minutes until everything is hot and the sauce has thickened. Add more stock or cream if necessary.
- Garnish with parsley and serve with freshly grated cheese.

- 3/4 cup (180 ml) single (light) cream
- 1/2 cup (30g) freshly grated Parmesan cheese, plus extra for serving
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the oil in a large skillet over medium heat. Add the mushrooms, garlic, salt, pepper, and thyme and cook for about 5 minutes, stirring occasionally, until the mushrooms are softened.
- Add the wine (or broth or water) and simmer for a minute or two until the liquid is mostly evaporated.
- Add the cream and simmer for another minute, until the cream has thickened.
- Remove from heat and stir in the Parmesan and parsley.
- Meanwhile, cook the pasta according to package instructions.
- Drain the pasta and return to the cooking pot. <
