Creamy Bacon Mushroom Pasta:
Need only a few ingredients and around 1 hour to make this creamy bacon and mushroom pasta – perfect for any weeknight. For this recipe you need: one pack of bacon, sliced portobello mushrooms, roasted garlic, a white onion (thinly sliced), Greek yoghurt, a teaspoon of vegetable stock, pasta, and parsley for garnish.
First, you will want to cook your bacon. In a large pan, cook the bacon on medium-high heat for 8-10 minutes, flipping the bacon over about halfway through and stirring it for evenly cooking. Once the bacon has become crispy, transfer the strips to a paper towel-lined plate and set aside. You can also save 2 tablespoons of the bacon fat for later.
In the same pan you cooked the bacon, add the portobello mushrooms. With the remaining bacon fat, cook the mushrooms while occasionally stirring to evenly cook them on all sides. Add the roasted garlic and the onion to the pan and cook the mixture for another 4-5 minutes.
Once the onion is softened, add the Greek yoghurt and reduce the heat to low or medium-low. Then, fill the pan up with the cooking liquid and stir in the vegetable stock. After that, add the bacon back into the pan and mix everything together. Let the mixture simmer for about 8 minutes, or until the pasta is fully cooked.
When the mixture is ready, serve the creamy bacon and mushroom pasta and garnish it with parsley. Enjoy!
