Ingredients
- 8 slices bacon, diced
- 2 tablespoons butter
- 1 onion, diced
- 8 ounces button mushrooms, quartered
- 3 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup all-purpose flour
- 2 cups vegetable broth
- 2 cups heavy cream
- Salt and pepper to taste
- 3 to 4 cups cooked penne pasta
- Chopped fresh parsley, for garnish (optional)
Begin by cooking the bacon. Heat a large skillet over medium-high heat and add the diced bacon. Cook until the bacon is crisp and browned, about 5 minutes. Remove the bacon from the skillet and transfer to a plate lined with paper towels. Reserve the bacon fat in the skillet.
Add the butter to the skillet and reduce the heat to medium. Add the onion and cook until it's softened, about 5 minutes. Add the mushrooms and cook, stirring occasionally, until they are golden brown, about 10 minutes. Add the garlic and red pepper flakes to the mushroom mixture and cook for an additional minute.
Add the flour and stir to combine. Cook for 2 minutes, stirring constantly, then slowly add the broth and cream, whisking to combine. Cook until the mixture has thickened, about 8 minutes. Season the sauce with salt and pepper to taste.
Add the cooked pasta to the skillet and stir to combine with the sauce. Add the bacon and heat through. Serve garnished with fresh parsley, if desired. Enjoy!
