There's no easier dinner than a cozy bowl of fresh pasta. And when you start with a plethora of options, you and your family will never get bored. Whether you prefer something traditional like mac and cheese, something a bit heartier like penne a la vodka, or something seafood-forward like shrimp and pesto, you can whip up a delicious dinner that's on the table in no time.
Asparagus and Tomatoes with Penne Pasta
This quick and easy recipe comes together in fewer than 30 minutes and is so darn tasty, everyone at the dinner table will be coming back for more. The moderately spicy Mediterranean flavors in this dish really shine with some freshly grated Parmesan cheese, a bit of garlic, and a good amount of chili flakes. You'll love that the asparagus delivers a good dose of vitamin A and Vitamin C, while the tomatoes bring the perfect amount of sweetness.
- Kosher salt
- Freshly ground black pepper
- 1 lb penne pasta
- 3 tbs olive oil
- 3 cloves garlic, minced
- Pinch of red chili flakes
- 1/2 lb asparagus, trimmed and cut into 2-inch pieces
- 3/4 cup grape or cherry tomatoes, halved lengthwise
- 1/2 cup Parmesan cheese, freshly grated
Start by bringing a large pot of salted water (1/4 cup for every 4 cups of water) to a rolling boil. Once boiling, add the pasta and cook according to package instructions. When the pasta is done, reserve one cup of the cooking liquid. Use a colander to drain the pasta, then set aside.
In a large skillet over medium heat, heat the olive oil. Add the garlic and chili flakes and cook for about one minute, or until fragrant. Add the asparagus and season with salt and pepper. Sauté for about eight minutes or until the asparagus is crisp-tender. Add the tomatoes and cook for another two minutes.
Add the cooked penne to the pan, reserving the cooking liquid in case you need it to moisten the pasta. Toss everything together for about one minute, adjusting salt and pepper as needed. Add the Parmesan cheese and toss to combine. If the pasta is too dry, add some of the reserved cooking liquid to moisten.
Serve the pasta topped with a bit of extra Parmesan cheese and enjoy!
