This veggie pasta is just the perfect combination of flavors and textures that’s sure to please everyone! Pasta, vegetables, and cheese all come together in this simple meal that will quickly become a favorite.
Ingredients
- 1 pound of penne pasta
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 (14-ounce) can diced tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Boil the pasta according to package instructions.
- Heat the olive oil in a large skillet over medium heat. Add in the bell pepper, onion, and garlic. Cook until the vegetables are softened.
- Stir in the diced tomatoes, Italian seasoning, salt, and black pepper. Bring to a simmer and allow to cook for about 8 minutes, stirring occasionally.
- Once the pasta is cooked, strain it and return the skillet containing the vegetables to the stovetop over medium heat. Add the butter and pasta to the vegetables.
- Stir the pasta and vegetables until the butter is melted and everything is evenly combined. Top with Parmesan cheese.
- Serve warm in individual bowls and enjoy!
Roasted Veggie Pasta
- 2 tablespoons olive oil
- 1 red onion, cut into wedges
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 2 cups kale, chopped
- 1 cup grape tomatoes, halved
- 1 cup fresh basil, chopped
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound penne pasta
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 375°F.
- Spread out the olive oil, onion, garlic, bell pepper, zucchini, kale, and tomatoes on a baking sheet. Sprinkle with basil, red wine vinegar, Italian seasoning, salt, and pepper.
- Bake in preheated oven for 20 minutes, stirring halfway through.
- While the vegetables are roasting, boil the penne per package instructions.
- Once the pasta and vegetables are done, combine them in a large bowl and stir until everything is evenly coated. Sprinkle with Parmesan cheese.
- Serve warm in individual bowls and enjoy!
