Mushroom Tomato Sauce for Pasta
This simple and easy recipe takes only 20 minutes to make and only requires a few ingredients. You’ll need:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, quartered
- 1 can (14.5 ounces) stewed tomatoes
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1/2 cup vegetable broth
- 1/4 cup chopped fresh parsley
- 16-oz of your favorite pasta
Mushroom Pasta Recipe
Cook the pasta according to package directions. Meanwhile, heat olive in a large skillet over medium heat. Add the onion and garlic and cook for 3-4 minutes or until onions are softened. Add the mushrooms and continue cooking for 4-5 minutes or until mushrooms are browned. Add the stewed tomatoes, basil, salt and pepper, and broth and mix together. Reduce heat to low and simmer for 10 minutes. Add the parsley and mix again. Finally, drain the cooked pasta and add it to the sauce. Mix everything and remove from heat.
