Ingredients:
- 1 onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil or vegan butter
- 250 g mushrooms, sliced
- 1 teaspoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 400 g penne pasta (or other short pasta of choice)
- 800 ml vegetable broth
- 2 tablespoons nutritional yeast (optional)
- Salt & pepper to taste

This One Pot Creamy Mushroom Pasta with Spinach dish is as delicious as it is beautiful. Not only is it a scrumptious vegetarian meal, but also a vegan-friendly delight that’s sure to please everyone around the dinner table. And since it cooks up all in one pot in approximately thirty minutes, it's the perfect hassle-free meal for busy weeknight dinners.
Ingredients:
- 2 tablespoons olive oil or vegan butter
- 1 onion, finely diced
- 2 cloves garlic, minced
- 250 g mushrooms, sliced
- 400 g penne pasta (or other short pasta of choice)
- 800 ml vegetable broth
- 100 g fresh spinach
- 25 g vegan cream cheese (or vegan sour cream)
- 2 tablespoons nutritional yeast (optional)
- Salt & pepper to taste
To begin, add the olive oil or vegan butter to a large pot over medium heat. Once hot, add the onions and sauté for about 5 minutes until softened. Add the garlic and stir for about 1 minute.
Then, add the mushrooms to the pot, reduce the heat to low, and cook for about 5 minutes, stirring occasionally. Add the thyme, parsley, and pasta to the pot and stir together.
Next, add the vegetable broth to the pot and bring to a boil. Once boiling, reduce the heat to a simmer and cook for about 10 minutes, stirring occasionally, until the penne is cooked through. The liquid should be mostly absorbed by this point. Then add the spinach and vegan cream cheese to the pot and stir. Note that the cream cheese will melt through the liquid and create a creamy sauce.
Once the pasta is cooked through, turn off the heat and top with nutritional yeast, if using. Give it a good stir and season with salt and pepper to taste. Serve warm and enjoy!
