This vegan mushroom pasta recipe is the perfect, quick and easy dish. It’s loaded with delicious mushrooms in a creamy sauce and cooked with spaghetti. Plus, it all cooks in one pot, so there’s hardly any washing up!
Vegan Mushroom Pasta
This tasty mushroom pasta is a great weeknight dinner and has a creamy sauce that’s completely dairy free. It’s made with just a few simple ingredients and it’s ready in about 30 minutes. You can use any type of mushrooms for this recipe, I usually go for baby portobello mushrooms that I find in the grocery store.
Creamy Mushroom Pasta Recipe
Ingredients:
- 1 package (16 oz) spaghetti
- 2 packages (8 oz each) of mushrooms of your choice, sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1/4 cup vegan butter
- 1/4 cup all-purpose flour
- 2 cups vegetable broth
- 1/4 cup white wine (optional)
- 1 cup canned coconut cream
- 2 tablespoons chopped fresh parsley (plus more for serving)
- 1 teaspoon lemon juice
- Salt and pepper, to taste
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to the package directions. Drain, reserving 1 cup of the cooking liquid.
2. Heat the vegan butter in the same pot over medium heat. Add the mushrooms and onion and sauté for 3-4 minutes, until the vegetables are softened. Add the garlic and cook for another minute.
3. Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes, then slowly add the vegetable broth and white wine (if using). Simmer for 5 minutes, stirring occasionally.
4. Add the coconut cream and simmer for 10 minutes, stirring occasionally. The mixture should start to thicken up.
5. Add the cooked spaghetti, parsley, and lemon juice and stir to combine. Taste and season with salt and pepper, as needed. If the sauce is too thick, add some of the reserved cooking liquid.
6. Serve with fresh parsley, if desired. Enjoy!
