Ingredients
1 onion
2 cloves garlic
2 tablespoons olive oil
1 pound mushrooms, sliced
1 bunch spinach leaves, washed, dried and chopped
1 teaspoon salt
1 cup almond, soy or coconut milk
2 tablespoons tomato paste
2 tablespoons nutritional yeast for a non-dairy cheese flavor (optional)
12 ounces gluten-free penne
½ cup chopped parsley leaves (optional), for garnish
Instructions
- In a large skillet, heat the oil over medium-high heat and add the onions. Cook until golden brown, about 7 minutes. Add garlic and cook for 2 minutes.
- Add mushrooms, spinach and salt, and lower the heat to medium. Cook, stirring often, until the mushrooms are soft, about 8 minutes.
- Stir in the tomato paste and the nutritional yeast, if using. Add the milk and stir until combined. Simmer the sauce over medium-low heat for 5 minutes.
- Meanwhile, cook the pasta in salted boiling water in accordance with the package directions until al dente.
- Drain the cooked pasta and add it to the skillet with the sauce. Stir to combine until the pasta is evenly coated with the sauce. Add more almond milk, if needed.
- Garnish with parsley, if desired, and serve hot.
