Ingredients:
3 cups cooked elbow macaroni or any other small pasta of your choice
1/4 cup diced red onion
1/4 cup diced celery
1/4 cup diced red or green peppers
1/4 cup black olives (optional)
1 cup diced tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 cup grated Parmesan cheese
1/4 cup Italian dressing, plus more if desired
Instructions:
1. Cook the pasta according to the package instructions. Drain, rinse with cold water, and set aside to cool.
2. In a large bowl, combine the cooled pasta, onion, celery, peppers, olives, and tomatoes. Sprinkle with oregano, basil and Parmesan cheese. Toss to combine.
3. Add the Italian dressing and toss to coat. Taste and add more dressing if desired. Cover and chill until ready to serve.
Now your delicious easy pasta salad is ready! Serve it chilled or at room temperature. If you have extra salad, it will keep in the refrigerator for up to 3 days. Enjoy!
