This creamy Mushroom Pasta recipe is the ultimate comfort meal you need in your life! Made with just a handful of ingredients, this delicious vegan spin on a classic dish will bring flavor and color to your plate. Filled with loads of mushrooms, garlic, and a creamy sauce, this easy and simple pasta will become a go-to favorite in your household.
Ingredients:
2 tablespoons of olive oil
1 onion, diced
4 cloves of garlic, minced
1 lb cremini mushrooms, sliced
1 pinch of red pepper flakes (optional)
1 tbsp fresh thyme leaves
¼ cup white wine or vegetable stock
2 tablespoons of all-purpose flour
2 cups of plant-based milk
1 teaspoon of nutmeg
Salt and pepper to taste
340 g of your favorite pasta
¼ cup chopped parsley leaves
Instructions:
1. In a large skillet, heat up the olive oil and add the onions and garlic. Cook over medium heat until softened, about 5 minutes.
2. Add the mushrooms, red pepper flakes, and thyme and cook, stirring occasionally until the mushrooms are golden in color, about 10 minutes.
3. Add the white wine (or vegetable stock) and let cook for a few minutes, until the liquid is reduced.
4. Add the flour and mix, so it combines with the vegetables and all the liquid is absorbed.
5. Pour the plant-based milk and mix everything together. Simmer over medium heat until the sauce thickens, about 5 minutes.
6. Add the nutmeg, and salt and pepper to taste. Set aside.
7. In a large pot of salted boiling water, cook the pasta according to the instructions on the package.
8. Once cooked, drain the pasta and add it back in the same pot.
9. Pour the creamy mushroom sauce over the cooked pasta, mix to combine everything and cook for a few more minutes over medium-high heat.
10. Remove from heat and add the chopped parsley leaves. Serve hot. Enjoy!
