Meatless “Meat” Sauce
This first recipe can be used to make meat substitutes from beets, mushrooms, and sun-dried tomatoes. Here's what you'll need to make your own meatless "meat" sauce:
- 1 cup of diced raw beets
- 1 cup of chopped mushrooms
- 1/2 cup of sun-dried tomatoes, chopped
- 2 cloves of garlic, minced
- 1/2 teaspoon of dried oregano
- 1 tablespoon of olive oil
- 1/2 cup of vegetable broth
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 1/4 cup of chopped fresh parsley
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the beets, mushrooms, garlic and oregano, and cook until the vegetables are tender, about 5 minutes.
- Add the sun-dried tomatoes, vegetable broth, salt, and pepper. Bring to a simmer, reduce the heat to low, and cook for 10 minutes, or until the mushrooms and beets are cooked through.
- Stir in the parsley, and adjust the seasonings to taste.
- Serve over your favourite pasta.

This second pasta dish is made with soy crumbles, mushrooms and plenty of veggies for a delicious, filling meal. Here’s what you’ll need:
- 1/2 cup of diced onion
- 2 cloves of garlic, minced
- 1/2 cup of diced carrots
- 1/2 cup of diced celery
- 3/4 cup of diced mushrooms
- 1 (16-ounce) package of vegan soy crumbles
- 1 (28-ounce) can of crushed tomatoes
- 1 (6-ounce) can of tomato paste
- 2 tablespoons of vegan Worcestershire sauce
- 1 tablespoon of Italian seasoning
- Salt and pepper to taste
Instructions:
- Heat a large saucepan over medium-high heat and add the onion, garlic, carrots, celery, and mushrooms.
- Cook until the vegetables are tender, stirring occasionally, about 3 minutes.
- Add the soy crumbles, crushed tomatoes, tomato paste, Worcestershire sauce, Italian seasoning and season generously with salt and pepper.
- Bring to a simmer, reduce the heat to low, and cook for 10 minutes.
- Serve over your favourite type of pasta.
