Veggie-Loaded Pasta Salad
- 1 package of whole grain pasta, such as spaghetti, penne, or rotini
- 1/2 cup extra-virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon honey
- 1/2 teaspoon ground pepper
- 1/2 teaspoon garlic powder
- 1/2 cup fresh parsley
- 1/2 cup julienned carrots
- 1/2 cup sliced olives
- 1/2 cup diced tomato
- 1/4 cup diced red onion
- 1/3 cup crumbled feta cheese
Veggie Pasta Primavera
- 1 package of whole grain pasta, such as spaghetti, penne, or rotini
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 cup ramps (or garlic scapes or green onions), diced
- 1 cup fresh asparagus, cut into 1-inch pieces
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach leaves
- 1/2 cup crumbled feta cheese
- 2 tablespoons freshly-chopped parsley
To make the pasta salad, cook the noodles according to package directions. In a large salad bowl, whisk together olive oil, white wine vinegar, honey, pepper, and garlic powder. When the noodles are finished cooking, drain and add to the salad dressing. Add all the remaining ingredients (except the feta) and toss to coat. Sprinkle with feta and fresh parsley and serve.
To make the veggie pasta primavera, cook the noodles according to package directions. Heat the olive oil in a large skillet over medium heat. Add the garlic powder, salt, and pepper and cook for 30 seconds. Add the ramps, asparagus, and tomatoes and cook until the vegetables are tender, about 5 minutes. Add the baby spinach and cook until wilted, about 2 minutes. Add the cooked pasta and cook until coated with the vegetables and heated through, about 1 to 2 minutes. Sprinkle with feta and fresh parsley and serve.
