Ingredients:
For this recipe, you will need:
- 16 ounces macaroni
- 1 teaspoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1⁄4 teaspoon red pepper flakes
- 2 cups canned diced tomatoes with their juice
- 3 cups chicken broth
- 1 bay leaf
- 2 cups grated cheese (mozzarella, cheddar, havarti, or a combination)
Instructions:
Begin by preheating the oven to 375°F (190°C).
Fill a large pot with water and bring it to a boil. Once boiling, add the macaroni, stirring occasionally until al dente. Once cooked, drain, and set aside.
In a large skillet over medium heat, add the olive oil, onion and garlic. Sauté for three minutes until the onions are softened and translucent. Add the oregano, basil, and red pepper flakes and continue to cook for an additional minute. Then, add the tomatoes and their juice, chicken broth, and bay leaf and stir to combine. Simmer for five minutes, then remove from heat.
In a greased 9x13 inch baking dish, add the cooked macaroni, and then the tomato mixture. Mix until everything is evenly combined. Top with the grated cheese and bake for 20 minutes until cheese is melted and bubbly.
Let cool for five minutes before serving. Store any leftovers in the refrigerator for up to three days.
