Ingredients
- 8 ounces dried fettuccine or other pasta
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups half-and-half
- 8 ounces freshly grated Parmesan
- Salt
- Freshly ground black pepper
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic
- 2 teaspoons chopped fresh thyme
Instructions
- Begin by prepping the ingredients: Cook the pasta according to package instructions, until al dente. Grate the Parmesan. Cut the chicken into small cubes.
- In a medium saucepan, heat the butter over medium heat until melted and bubbling. Whisk in the flour, stirring continuously, for about one minute. Whisk in the half-and-half until no lumps remain. Cook over medium heat, whisking occasionally, until the mixture starts to simmer and thicken, about three minutes.
- Reduce the heat to low, add the Parmesan, and stir until melted. Season with salt and pepper, to taste.
- In a separate, large pan, heat olive oil over medium-high heat until shimmering. Add the chicken cubes, stirring to separate them, and cook until lightly golden, stirring occasionally, about four minutes. Add the garlic and thyme and stir until fragrant, about 30 seconds.
- Add the cooked pasta to the sauce, along with the cooked chicken mixture. Stir to combine. Serve with freshly grated Parmesan, if desired. Enjoy!
