Creamed Pasta with Bacon + Vegetables
Ingredients:
- 1 lb bacon, chopped
- 4 cloves garlic, minced
- 1 onion, finely chopped
- 2 tablespoons all-purpose flour
- 1½ cups heavy cream
- 1 cup low-sodium vegetable broth
- 2 cups fresh mushrooms, diced (optional)
- 2 cups fresh vegetables of your choice (optional)
- Salt and pepper, to taste
- 1 lb uncooked penne
Instructions:
- In a large skillet, over medium heat, fry the bacon until cooked and crispy. Reserve ½ cup of the broth and set aside.
- Add the garlic and onion to the same skillet and cook, stirring occasionally, for about 5 minutes, or until the onion is softened and lightly browned.
- Stir in the all-purpose flour, and cook for an additional 1 to 2 minutes.
- Stir in the heavy cream, vegetable broth, mushrooms and vegetables, if using. Cook for about 8 minutes, stirring occasionally, until the sauce has thickened.
- Season with salt and pepper, to taste, and remove from heat.
- In a large pot of boiling salted water, cook the penne according to package instructions; drain, reserving ½ cup of the cooking liquid.
- Return the cooked penne to the pot and add the bacon sauce. Stir in the reserved ½ cup of cooking liquid, if necessary, to achieve the desired creamy consistency.
- Stir in the reserved cooked bacon and serve.
