Instructions
In a bowl, combine the ricotta cheese and spinach, stirring until combined. Set aside.
In a medium pan over medium heat, cook the mushrooms and spekkies until brown. Add the cream fraiche, Italian herbs and the ricotta and spinach mixture. Stir until everything is well combined. Season with salt and pepper before turning off the heat.
In a separate pot, cook your pasta according to the instructions on the package.
Add the pasta to the sauce and stir together. Serve with a sprinkle of Parmesan cheese and enjoy!
