Fajita Chicken Pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 2 large boneless, skinless chicken breasts, cut into small pieces

- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 2 cups penne pasta
- 1 cup shredded cheese (cheddar, mozzarella, etc)
- 2 tablespoons freshly squeezed lime juice
- 3 tablespoons chopped cilantro
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for one minute. Add bell peppers and cook for 3 minutes. Add chicken to the skillet and cook, stirring occasionally, until chicken is cooked through.
- Stir in paprika, chili powder, cumin, garlic powder, salt and pepper. Cook for 1 minute.
- Add chicken broth and bring to a boil. Once boiling, add in penne pasta and cook until al dente, about 8-10 minutes.
- Remove from heat and stir in shredded cheese, lime juice and cilantro. Serve immediately.
