A comforting meal for two isn't something that is hard to find. This quick and easy pesto chicken pasta and roasted tomatoes recipe is a delicious combination that is sure to please everyone. With a delicious meal and a few simple ingredients, you and your special someone will be able to enjoy a tasty dinner in no time.
Ingredients:
2 boneless skinless chicken breasts
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 pint grape tomatoes
8 ounces penne pasta
1/4 cup prepared pesto
Directions:
Preheat oven to 375° F. Sprinkle chicken breasts with salt and pepper. Heat olive oil in a large oven safe skillet over medium-high heat until hot. Add chicken breasts, and cook 3 minutes per side or until golden brown. Remove chicken and set aside on a plate.
Add tomatoes to the hot skillet. Roast tomatoes in the oven for 15 minutes. Meanwhile, bring a large pot of salted water to a boil. Add penne pasta, and cook 8-10 minutes or until al dente. Drain, and return to pot.
When tomatoes are finished roasting, add pesto to the pot with the pasta and tomatoes. Slice chicken breasts and add to the pot. Heat until warm, stirring occasionally. Serve warm.

1 small onion, finely chopped
1 teaspoon garlic, minced
1 teaspoon Italian seasoning

2 boneless skinless chicken breasts, cut into 1/2-inch cubes
1 cup sliced mushrooms
1 cup broccoli florets
2 carrots, peeled and cut into 1/2-inch pieces
1/2 cup chicken broth
2 cups cooked penne pasta
1/4 cup freshly grated Parmesan cheese
Directions:
Heat olive oil in a large skillet over medium-high heat until hot. Add onion and garlic, and cook until fragrant, about 2 minutes. Add Italian seasoning, salt, and pepper, and stir. Add chicken and mushrooms, and cook for about 5 minutes, or until chicken is cooked through. Add broccoli and carrots, and cook for 5 minutes, stirring occasionally.
Add chicken broth and bring to a simmer. Simmer for 5 minutes. Add cooked penne pasta and stir to combine. Cook for another 5 minutes, or until vegetables are tender. Sprinkle Parmesan cheese over the top, and serve warm.
