Mushrooms and sundried tomatoes are always a winning combination, and this Tomato-Mushroom Pasta Bowl tastes amazing! Start to finish, dinner is ready in 30 minutes-- perfect for a weeknight. Delicious, satisfying, and a healthy dinner for everyone in the family.
Ingredients:
- 3 tablespoons olive oil
- 1 clove garlic, minced
- 1 cup sliced mushrooms
- 1 cup halved cherry tomatoes
- 1/2 cup oil-packed sundried tomatoes, drained and chopped
- 1 teaspoon dried thyme
- Salt and freshly ground pepper
- 1/2 pound whole wheat spaghetti or linguine
- Grated Parmesan cheese, optional
Instructions:
Heat the olive oil in a large skillet over medium heat. Add the garlic and mushrooms, and sauté until the mushrooms are tender and most of their liquid has been absorbed, about 5 minutes. Add the cherry tomatoes, sundried tomatoes, thyme, salt and pepper, and continue to cook for a few minutes, until the tomatoes have softened slightly. Meanwhile, bring a pot of salted water to a boil and cook the pasta according to package directions. When the pasta is cooked, drain it and add it to the skillet with the vegetables. Stir everything together and cook for a few minutes to allow the flavors to combine. Serve warm and, if desired, topped with grated Parmesan cheese.
