This delectable baked pasta dish is sure to please! Our easy baked penne pasta recipe is super flavorful and simple to make. It comes together quickly and can easily be fed to your whole family. Best of all, this dish can be kept warm for when those unexpected dinner guests show up!
Ingredients
- 1 teaspoon extra-virgin olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 pound ground beef 93% lean
- 1- 28 oz can crushed tomatoes
- 1 cup zucchini, diced
- 2 teaspoon Italian seasoning
- 1-12 oz. box penne pasta
- 1/2 cup shredded (low moisture) part-skim mozzarella cheese
- Salt & pepper to taste
Instructions
- Preheat oven to 375°F and grease a large casserole dish.
- Heat a small skillet over medium heat and add the olive oil. When the oil is hot, add the garlic and red pepper flakes and cook for one minute until the garlic is fragrant and the pepper flakes begin to sizzle. Add the ground beef and cook for about 7-8 minutes until the beef is fully cooked and no longer pink.
- Once the beef is cooked, add the diced zucchini, crushed tomatoes, Italian seasoning and salt and pepper to taste. Stir to combine and lower the heat to low.
- In a large pot, bring 4-5 cups of water and a tablespoon of salt to a boil over high heat. Once boiling, add the penne and cook to al dente according to package instructions. Drain the pasta and set aside.
- Once the beef mixture has simmered for 10 minutes, add 4-5 cups of the cooked pasta to the beef mixture and stir to combine.
- Pour the beef and pasta mixture into the prepared casserole dish and sprinkle the mozzarella cheese on top. Cover the dish with foil and bake in the preheated oven for 15 minutes. Remove the foil and then bake uncovered for an additional 10 minutes.
- Remove the pan from the oven, let cool and enjoy!
