Today I am making a delicious Penne Pasta dish with Veggies & Chicken Sausage. This dish is a crunchy, savory combination that makes a great lunch or dinner. Plus, it’s super easy to make!
Ingredients:
-1/2 pound penne pasta
-2 tablespoons olive oil
-1 small onion, diced
-2 cloves garlic, minced
-1 bell pepper, diced
-1/2 teaspoon red pepper flakes
-2 cups sliced mushrooms
-1/2 teaspoon Italian seasoning
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/2 pound chicken sausage, sliced thin
-1/4 cup freshly grated Parmesan cheese
Instructions:
1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes. Stir in the red pepper flakes, mushrooms, Italian seasoning, salt, and pepper and cook until the mushrooms are softened, about 5 minutes more.
3. Add the chicken sausage and cook, stirring occasionally, until cooked through, about 5 minutes. Stir in the cooked pasta and Parmesan cheese and cook until heated through and cheese is melted, about 2 minutes more.
4. Serve hot. Enjoy!
