Creamy Mushroom Chicken Pasta
This classic dish is a filling yet light meal that everyone will enjoy. Seared chicken, earthy mushrooms, and penne pasta are coated in a rich and creamy sauce. Scatter over a handful of parsley for a final hint of freshness.
- 1 tablespoon olive oil
- 450g trimmed chicken tenders
- 150g brown mushrooms, sliced
- 2 cloves garlic, finely chopped
- 2 teaspoons dried Italian herbs
- 375g penne pasta
- 2 cups chicken stock
- 250ml light cream
- 1/3 cup chopped flat-leaf parsley
Heat the oil in a large heavy-based pan. Add the chicken tenders and fry for 5-7 minutes until golden and cooked through. Set aside and cover.
With the pan still on medium heat, add the mushrooms, garlic, and Italian herbs. Fry for 4-5 minutes until softened. Pour in the penne and chicken stock. Simmer for 8-10 minutes until the pasta is cooked.

Add the light cream and parsley to the pan with the cooked penne, along with the chicken tenders. Simmer for a few minutes until the sauce thickens, stirring often. Serve with a green salad and garlic bread on the side.
