Mushroom Pasta Salad Recipe: Roasted Asparagus & Mushroom Pesto Pasta Salad

Mushroom salads are a delicious and nourishing way to enjoy a light meal. Combining hearty mushrooms with the mild and nutty flavor of lentils and the sweetness of caramelized onions, the flavors of this salad will make your taste buds sing.

Mushroom Lentil Salad

Ingredients

1/2 cup lentils
1 teaspoon olive oil
2 medium onions, sliced
1 teaspoon sugar
1 teaspoon balsamic vinegar
1 pound mushrooms, sliced
2 tablespoons freshly chopped parsley
1 tablespoon lemon juice
2 tablespoons toasted almonds, roughly chopped
Salt and pepper, to taste

Instructions

Bring a pot of water to a boil and add the lentils. Simmer until tender, about 20 minutes. Drain and set aside.
Heat the oil in a large skillet over medium-high heat. Add the onions and cook for 5 minutes.
Add the sugar, balsamic vinegar and mushrooms to the skillet. Cook, stirring frequently, until the mushrooms are tender, about 10 minutes.
Place the cooked lentils and mushrooms in a large bowl. Add the parsley, lemon juice, almonds, and salt and pepper. Gently toss everything to combine.
Transfer the salad to a serving bowl, garnish with more almonds, and serve.

Ingredients

1 pound mushrooms, sliced
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 cloves garlic, minced
1/4 teaspoon smoked paprika
1/4 cup red wine
1/4 cup balsamic vinegar
2 cups cooked pasta (such as penne)
1/2 cup grape tomatoes, halved
1/4 cup crumbly feta cheese
1/4 cup fresh basil, thinly sliced

Instructions

Preheat oven to 375 degrees F. Place the mushrooms on a baking sheet.
In a small bowl, whisk together the oil, salt, pepper, garlic powder, onion powder, garlic, smoked paprika, red wine, and balsamic vinegar. Pour over the mushrooms, stirring to make sure they are evenly coated. Roast in the oven for 15 minutes.
Remove from oven and let cool.
In a large bowl, combine the cooked pasta, roasted mushrooms, grape tomatoes, feta cheese, and basil.
Gently toss everything to combine.
Serve warm, at room temperature, or chilled
