Ingredients:
3 tablespoons olive oil
1/2 large onion, chopped
2 cloves garlic, minced
8 ounces mushrooms, sliced
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried
1 teaspoon Italian seasoning
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes
1/4 cup grated Parmesan, plus
2 tablespoons for later
1/2 cup white wine
1 cup chicken stock
1/4 cup sun-dried tomatoes, chopped
3 tablespoons all-purpose flour
1 pound penne or rotini pasta
2 tablespoon butter
2 tablespoons chopped parsley
Salt and pepper, to taste
Instructions:
Heat a large cast iron skillet over medium-high heat. Add olive oil and heat until shimmering. Add in onion and sauté for 3 minutes or until translucent. Add garlic, mushrooms, thyme leaves, Italian seasoning, ground black pepper and red pepper flakes and cook until mushrooms are tender, about 5 minutes. Add 1/4 cup Parmesan, white wine, chicken stock, sun-dried tomatoes, and flour to the skillet. Cook, stirring constantly until the sauce has thickened. Remove from heat.
Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Drain the pasta in a colander and add it to the skillet with the sauce. Stir together. Add in butter and parsley. Season with salt and pepper.
Preheat oven to 375°F. Pour the pasta mixture into an ovenproof dish. Sprinkle the remaining 2 tablespoons parmesan cheese on top. Bake for 15 minutes or until heated through. Serve warm.
