Ahhh, one of life's great pleasures: Pasta. Something so simple is so infinitely customizable and can so easily become an absolute work of art. One of my favorites to make is Spaghetti Mushroom. Every time it hits the dinner table I swear I can feel the warm embrace of an Italian Grandmother, made with love.
Here are the ingredients & instructions you'll need to get started:
- 2 tablespoons of olive oil
- 3 cloves of minced garlic
- 2 pints of mushrooms, sliced thin
- 1/4 cup of white wine
- 2 tablespoons of chopped parsley
- 1/4 teaspoon of red pepper flakes
- 1 teaspoon of dried oregano
- 2 tablespoons of butter
- 1/4 cup of grated Parmesan cheese
- 1 pound of spaghetti
Now it's time to get cooking! Heat the olive oil in a large skillet over medium heat, and then add garlic and sauté until fragrant, which should take around 1 minute. Add the mushrooms and cook the mushrooms until they are lightly browned and tender. This should take roughly 6 minutes. Now add the wine to the skillet, stirring to release all the flavors. Let the pan simmer for a good minute or two before you stir in the parsley, pepper flakes and oregano. Reduce the heat to low and fold in the butter and Parmesan cheese until they are both melted in.
Bring a pot of water to a boil and season with lots of salt. Add the the spaghetti and cook al dente, according to package instructions. When the pasta is done, drain the water and add it to the skillet withe the mushrooms. Toss it all together and fried for 1 or 2 minutes. Serve it up and think about that Italian Grandmother’s warm embrace one more time! Buon Appetito!
