Spicy Masala Pasta
This authentic Indian style pasta recipe is the perfect one pot meal for any day of the week. It has all the flavors of Indian spices blended in with tomato and garlic, and it also goes great with garam masala. This dish takes about 20 minutes to make and it's ready to serve, so it's perfect for busy weekdays.
To begin, start by heating some oil in a large skillet over medium-high heat. Then, add the chopped onions and garlic and sauté until they are translucent and the garlic starts to become golden. Next, add tomato puree, chili powder, garam masala, turmeric, salt to taste, and stir to mix everything together.
Once the spices have been mixed in well, add the drained pasta and stir. Then, add two cups of water and bring the mixture to a boil. Reduce the heat to low, cover and simmer for about 8-10 minutes, or until the pasta is cooked and most of the water has evaporated. If you need more liquid, add a few tablespoons of water at a time.
When the pasta is ready and has absorbed all the spices, remove from heat and stir in the chopped fresh cilantro. Serve this delicious and spicy masala pasta for lunch or dinner with a side of freshly cooked Rice or Roti.

Ingredients
- 2 tablespoons vegetable oil
