Sundried Tomato Pesto, Sausage & Mushroom Pasta
This Italian dish won’t just make your taste buds dance; it’s a great dish to use up any leftovers that you have in your fridge. With the garlic, onion, bell peppers, fresh basil, and whatever extra sausage and mushrooms you have can go crazy in the kitchen and make this meal to your liking.
- 3 tablespoons olive oil
- 1 lb. ground sausage (sweet Italian sausage works best)
- 1 small onion; diced
- 1 bell pepper; diced
- 3 cloves garlic; minced
- 1/2 teaspoon dried oregano
- 10 ounces mushrooms; sliced
- 3/4 cup sun-dried tomatoes in oil; drained and chopped
- 1/2 teaspoon red pepper flakes; optional
- 1/4 cup basil; chopped
- 1 lb. penne pasta
- Salt and pepper; to taste
- Parmesan cheese; for topping
Instructions
- In a large skillet, heat up the olive oil over medium-high heat. Add the ground sausage and cook, breaking it up as you go, for several minutes until it's browned.
- Add the onions, bell peppers, garlic, oregano, mushrooms, sun-dried tomatoes, and red pepper flakes to the skillet. Cook for 4 to 5 minutes until the vegetables have softened.
- Stir in the basil and season with salt and pepper, to taste.
- In the meantime, cook the penne pasta according to the instructions on the package. Once the pasta is cooked, drain and rinse it.
- Stir the cooked penne into the sausage and vegetable mixture. Cook for an additional 2 minutes.
- Serve each individual bowl with some freshly grated Parmesan cheese.
